mine flames quite a lot - standard car except mongoose exhaust and k&n filter - normally on motorway when giving it full throttle, then backing off or changing gear.

flames is not just because some moron has put too much fuel in the map on the overrun (which you can do on purpose if you want to go about flaming all the time, but would be a bit sad imo). it mostly happens because the inputs to the ecu for MAP and TPS are filtered, or in effect damped.
that means that if you lift off quickly, it takes the ecu a little while to see the MAP and TPS drop off, during which time it has continued to add the fuel needed at full chat which then burns in the exhaust
