Certain cars, mainly turbo'd as they increase combustion chamber heat very rapidly on boost can cause hot spots, pockets of super heated water, this then leads to lots of air, the idea of the pot is to allow the air to rise to the top and back into the expansion tank, whilst still allowing normal coolant flow, a little water will of course bleed through all the time, but this is no bad thing.
Soon to be available much cheaper and just as good from another company.
