Ford Mondeo MK-2 performing poorly

Hello!
I have a 1996 MK-2 GLX 2.0 Silvertop Zetec Ford Mondeo with 80.000KM on it, it was a fun car to drive yet reliable, it has been with me since 2009 and just recently I've had some real problem with really bad performance and high fuel consumption.
I try to keep the car well maintained and so far I've checked/changed recently:
- Fuel pump (Bosch) (Fuel pressure checked)
- Fuel Regulator
- Oil/Filter every 7.000km 5w30 synthetic
- Spark Plugs & Wires (NGK)
- Air and Fuel Filters
- Fuel Injectors Wiring Harness
- Water pump/Timing Belt/Serpentine Belt and tensioners/pulleys
- Had to block the EGR valve (running since last year like this, was OK)
The car idles normally and functions well at low RPMs/speed but I often find myself revving to 3-4 RPM because the car lacks power in a higher gear. It's very noticeable since I used to go up a hill normally in 4th at around 75km/h and now I can barely switch to 3rd at 50-60km/h.
It lacks power and feels like it's not the same car anymore, if I turn on the air conditioner it gets even worse.
When changing the spark plugs last time I noticed they were very brown in an unusual way after about 15.000KM.
Can I get some advice please?
