Water temp gauge doing strange things

The temp gauge on my RS is playing silly buggers. It seems OK, maybe sits too low, until you sit in traffic at which point it sky rockets. The water wont boil over though. With the blowers on full it slows the rise of the needle a bit. Once moving again it does drop which seems normal, but if you then turn the car off but leave the ign. on it will rise and rise until the fan comes on even if the engines not running.
Any ideas?

Why does the blower effect it? The rev counter joins in with weird readings when the temp gauge goes up too. Sometimes when it goes up then you move off it will just stay up there too.

So its had the fault for a while? The heater fans will help cool any car, the heater matrix is just like a smaller rad, so when you turn the temp up and the interior fans on it removes heat from the engine... slowing the temp rise.
Water pump? head gasket? blocked rad......

Yep it's done it since I've had the car. Just had to spend all my money and effort sorting other parts out! How can I check the gasket and pump?
