optimal running temperature

what is the normal running temperature of the cosworth engine?
like what sort of temperature does the cold start shut off?
ive just replaced my fan switch,the switch came with the car,its an msd"uprated" switch but was bringing the fans in too late for my liking over 100 degrees on ecu monitor.
I replaced it with a 88/77degree switch which is turning the fans on at 81degrees and shutting them off at 75,is this causing the engine to run too cold?
im having problems with the car hard to start when hot so just guessing it still on cold start??

most modern petrol cars only bring the fans on over 100 degrees not sure what it should be on the cossie though, i think they only come off cold start around 70 degrees

If I remember right
I was always told you want to be running around 92 deg at the engine

Optimal oil temp is about 90 deg.

all my sensors are new Glenn, I've bought another fan switch but gonna speak to karl Norris in the morning to get advice to see if it's worth fitting.
