Decent tow car for track car

Right I'm wanting a track car so need a suitable car capable of towing a car trailer.
The car I have at the mo, if i decide to track it, will weigh circa 1150kgs once stripped down (Impreza) and I'm using, as a guide, 500kg unladen weight for the trailer.
So car requirements,
Needs a minimum towing capacity of 1700kgs
Its going to be a daily so needs to be nice to drive etc.
Would be advantageous to have 7 seats though not essential.
Ideally needs to do as near to 40mpg as possible when not towing.
NO 4x4s and no vans ,pick ups, autos or BMWs!
Under £5k
I'm sure this will be difficult but any suggestions gratefully received.
If this becomes a problem then I'll be chopping in the Impreza for a sub 1000kg FWD Ford instead and will be able to use a TDi Touran as I'd hoped (Not enough tow capacity for my Impreza
)

using my mates old 1.9 r reg galaxy while i'm in the uk, and it is great, better than any mondeo i've owned on fuel, seats in it carries 7 seats out it like a transit for space, get a ghia and its got all the toys, also if you can find one, they did do a 4x4 vw model as well, but they is rare and not sure it was on the diesel or just the v6

I just know loads of people who have had imprezas and have had trouble with them.
There is a subaru specialist round the corner from where i work call Paul Stabler. I think he has is own web site.He is always doing engines on them.
Ive never said cossies are the best either.I just have a passion for fords and cossies.

I love Fords too, I grew up with them. The Impreza is the first real departure from Ford for me tbh. I'd have a Escos if they weren't so damn expensive, thats only because Ford never made enough of them
