Is it loosing coolant, from what your saying I should think so? Somehow the coolant is entering the combustion chambers, you have ruled out the HG and head (Assuming the head was known to be good) When you did the HG did you notice one cylinder was a lot cleaner than the rest? This will be the cylinder where the coolant is entering, it could be a cracked block and it's entering that way?

had something similar to this it turned out to be a rubber seal in a housing on the front of the engine gave the symptoms of head gasket but we sniffed it compression tested it to no avail it still lost water thats when a mate turned up and told us this housing on the front of the engine leaks ordered a new housing and gasket job done
