Default learning to mapp

Hi everyone my bro has just bought a new engine management for his s2 so we can learn ourselves to mapp i know it could end up badly but we just thought we would jump in at the deepend otherwise we would never learn so, we have got it all wired up now and got a base map so we have the car started now and the car was running rich at idle so we started to pull some fuel out and got it from 9-10 afr to around 13 afr but when we try to pull a bit more fuel out (to try and get it close to 14) its seems like its going to cut out.
Any hints or tips would be nice as i say its our first time we have done this.

I wouldnt worry too much about idle AFR, its such tiny volumes of fuel and air anyway that the mixture really isnt critical.
