The only "issue " if you dont use one in a 2wd housing is it runs cooler for longer ! i made the mistake of running without when i changed over to a 4wd system , cooked it in 3 laps , the water by passes the engine ! You have to weld up the back hole if you dont want to use the stat , cheaper to just buy a stat tho even tho theyre £40 now

I wouldnt run any car without one, nor would any manufacturer interestingly.... (Eh Radders?) But yes, the 4wd housing re routes the coolant once the engine gets hot, and without a stat you will potentially cook the motor as the radiator wont be radiating. 
You can buy 2 of them and have change for a pint of beer after postage if you shop at the right place.

The problem is that if you remove the stat you reduce the water pressure in the head, with reduced water pressure, steam pockets can form( usually around the rear cylinders) and will lead to a meltdown. This is why we run water restrictors in the thermostat housing when we want to run without a thermostat, to make sure there is water pressure there. We learnt this lesson the expensive way on a F1 motor.
