The problem is that if you remove the stat you reduce the water pressure in the head, with reduced water pressure, steam pockets can form( usually around the rear cylinders) and will lead to a meltdown. This is why we run water restrictors in the thermostat housing when we want to run without a thermostat, to make sure there is water pressure there. We learnt this lesson the expensive way on a F1 motor.
