is the cylinder head the same from a fiesta as the escort? if not what is the difference?

Nope.

The Fiesta head is shaped differently to accept the EFi fuel rail/inlet manifold.

so if i wanted to convert to efi i can just use the head from a fiesta or do i need the full engine

you don't even require a fiesta head, you can use an adaptor plate for the inlet.
