Polish or wax or both ?
I do this as a profession, and as has been mentioned, rinse, wash, rinse, clay, rinse/chamois dry, polish/pre-wax, wax. There isn't too much point in polishing a car and not putting wax over the top to protect and seal the shine etc.
The best polish depends on how much paint you want to polish away
For a very light polish you can use SRP which will also fill swirls to a degree and its also a good cleanser before you lay some wax.
For more cutt you could use Gtechniq P1 by hand if you dont have a machine.
Heres a demo for P1 via hand
As far as wax goes use a high content pure carnauba wax that will give it a lovey wet look. ( Also much nicer to apply than Hd wax ect)
Or if your not into waxing all the time stick some Gtechniq C1 or Exo for a more durable coating.
Exo is much easier to apply.
Also use a tar remover before you clay.
