easy way taking rear springs out ???

You can get them off by taking bolt out from top of shocks, unbolting ARB, disconnecting rubber brake lines and using spring compressors.
This worked well for me as i was putting braided lines on anyway. I'm sure other people will have other suggestions.

droping the rear beam is not that hard. I normally just unbolt what I need to let the rear arm swing down. a little force is needed to help it down the rest of the way to get the spring out. sometimes droping the rear beam can help. dont have to be droped much.
should try doin the front springs on a mustang if you think that is hard.
