Default cosworth bmw- mayo in breather pipes

hi folks, i had a new ported and polished head and a 3 layer stainlesssteel head gasket fitted in my cosworth converted bmw estate a couple of months ago, today i removed the pipes on the breather kit to find them full of the dreaded white mayo, this obviously concerns me but the garage is saying it will be caused by condensation in the engine because of the cold weather, they say its quite common.theres no sign on the dip stick or the filler cap , is the garage right or is it nonsense?

can happen if not driven much/driven short distances.

watch the water levels tho. if it disappears then ur in trouble
