Default Csowroth exhaust manifold gasket

I'm trying to figure out which way to put on the exhasur manifold gaskets on my Escort Cosworth. Does the metal side of the gasket go towards the block or the exhaust manifold. I can't remember which way it was a couple days ago when it was pulled apart for turbo replacement.

I had the same dilemma last weekend, when putting the manifold back on my Escort Cosworth. I guessed that the smooth metal side goes to the head, and the rough gasket side to the exhaust manifold. The reason for this is, I think that the aluminium head needs to be protected against the heat, and that the head is the smoothest side. The manifold is rough cast iron (Rougher that the head) so will require the “sponge” side of the gasket. As I said this was a calculated guess, but it would be nice to hear from someone who actually knows.
