Information on thermostat and operating temperature

Hi,
I have a quick question. My 89 rwd sierra cossie has aftermarket temperature guages. One for oil and one for water..
I believe the water guage normally sits at about 80, but in traffic or stopped it will climb to 110 until the fans kick in and take it back to 80.
Is this normal, I was expecting the fan to kickin at about 90 95

the settings for the fan switch are:
fans on at 86
fans off at 77
but that is the temperature in the radiator at the switch, not necessarily the temperature in the cylinder head where the temp sensor is.
don't know what the thermostat settings are.
