How easy are they to remove and fit? Why make it out of plastic. . . . .

pretty easy really just requires patience, lining it all up at the end to get the bar through can be annoying, if ya can get the pedal box out it would be easier

so would it be easier to take front seat out aswell so I can get in as the seat dont move back far enough due to metal bulk head?

yeh ya will need to take the seat out, make sure ya dont lay awkward on the floor pan as i di and the bar on the floor bruised my ribs, i found it easy to use a small socket at the end to line the brake pedal up while pushing the bar through as its very fidly
