Start my car (S2 RS TURBO) and the temp shoots rite to the top.

Now, when the car actually gets hot, the fan cuts in and alls well.. so whats making it go right to the top>

 

Could be a bad connection. If you earth the wire that goes to the temp sender, it makes the dial go right up or it could be a faulty sender.

usually full scale is short circuit to earth, so either the sensor has failed, or the wiring to ti is shorted down to earth somewhere - a quick check... if u unplug the cap off the end - does it go down..., if not , then its more than likely the loom.
