Testing the future
You should first have the gas recovered by an air coditioning specialist. If you don't care about contributing to global warming or risking a fine, you can just let it escape. Bbe careful, the gas is under pressure! however, the pressure in the system depends on the temperature, so in cold winter the pressure will only be around 3 bar or so (at 0 deg. C). Tthere will be a couple of charging ports for the system - they will be little nipples with plastic caps on and schrader valves like those on your wheel/tyre. Depress one of these slowly and carefully with a screwdriver or something - wear goggles and gloves because the gas may freeze you and burn you.
After all of the gas is out, you can undo any of the hoses in any order, but there may still be a little pressure in there so be careful still. The hoses will have some oil in them, try to collect this oil cleanly, and put it back into the compressor (the part fixed to the engine).
To put it back together, just refit everything. Any o-rings should be lightly oiled (with compressor oil - not engine or gearbox oil or wd40 or anything else). You will then need the system refilled again by a specialist company.
