Default Tracking?steering racks

This probably sounds really stupid, but i going to ask anyway:

THe tracking on my cabriolet is MILES out, so much so that when going in a straight line the steering wheel isn't straight, i tried taking the steering wheel off and moving it round, but then its out the same amount but in the other direction. Obviously im going to have the tracking done, but how do i get the rack dead in the middle so i have even amounts of lock in each direction? At the garages they just put the wheel straight and adjust them dont they, and i dont want un-even lock.

basically, straighten the wheel, measure the distance between the backs of your rims, and the fronts at 9 oclock & 3 oclock. undo the locknuts on top balljoints and rotate the steerin arms to get the measurements the same whilst the wheels are dead str8. (getting the wheels to track straight whilst wheel is dead ahead.) they wind in and out to toe in and out, but if they are of equal length then lock is equal assumin you put your wheel back on how it should hav been. if you're a whole turn of the wheel out then it'll be obvious as arms will be massively unequal lengths.

No no no i think youve misunderstood thats the problem i have, i dont know where exactly the wheel went on in the first place.......its all massively out. Surely there is a procedure for doing this, when you fit a new rack you have to set everything again......
