engine temp readings being funny

engine temp readings being funny
when i drive on the motorway the engine temp rises to the red but when i engage the clutch it drops a bit and when i slow down to about 40 it returns to midway.
also the fan is on
any ideas would be great
its a 2000 plate 1.6
there is no warning lights and drives fine
