Two great idea's for left over turkey;
1. Stir-fry it - cut it into strips and small chunks, whack it in a pan with a lil oil and some peppers, onions, herbs n stuff and stir-fry it
2. Turkey pie. Again strips and small chunks, make pie crust, fill pie, add the creamy chicken sauce type stuff, mushrooms, onions etc and bake in oven. Nice

If you like the curry's that you get from the Chinese takeaway/restraunts then pop out and get some of the curry paste that they use ..tastes great and its not over powering ..just make sure you dont put too much in as it can taste powdery.

Turkey is great tho Nath! I love a bit of turkey, far more interesting than chicken But turkeys are usually a lil on the big/expensive side to be had at most other times throughout the year so most, like us, wait till xmas to have one.
Personally tho, I'd have a big fat beef joint! It's my birthday today, so every year I get to have a turkey roast on xmas day, and then 2 days later convince my old mum to cook me a beef roast for my birthday Av it
