Follow the cables back to where they tap into the car loom (probably with a fistful of Scotchlok connectors) and carefully disconnect them. Then seal up any cuts in the car's wiring.
There won't be more than half a dozen bolts - get some WD40 or similar on them the day before.
It shouldn't take more than an hour or two to get it off, unless there is a bolt hidden by the petrol tank or something!
Remember to seal the bolt holes to stop any rust getting in.
