remapping or chipping cars....
how long does it take to remap a car? an hour ? 4 hours? I assume generally thered be a couple of staged options as per cosworth stage 1 ,stage 3 etc?

Live mapping and remapping, i.e a flash or EPROM (old EMS) are two completely different things.
The latter refers to simply replacing the existing calibration with another (i.e. generic) this is inferior to a live map on the premise that no two engines are ever the same.
In your case it shouldn't take long, as this will be a calibration.
The thing to consider is the DMF with modern dervs.

When i got the cossie set up/mapped the lad took my car away about 10.30 and he brought it back at about 6 at night. He had to get a lambda sensor boss welded in the front pipe.

As Marty says, completely dependant onnwhat your after, you can have your derv live mapped, but if your just having a stage 1 generic map then 1-2 hours depending on what's being done, some of the better companies like to do a health check too which can take longer and then run it on the rollers and check everything is running smooth afterwards too.
some companies plug you in load your software and away you go I've used people I've been recommended on kind of a home brew basis and never had a complaint, obviously works out cheaper, diesels aren't such an issue because they are in theory quite easy to tune and much more lienient to being tuned ham fistedly.
if it was a petrol car especially a turbo petrol then I'd only recommend people that know what they are doing and have a proven track record as petrol turbos especially can go bang pretty quickly if it's done wrong, and they won't be a £50 fix to put it right.

I'm buying a 3.2 turbo diesel Mercedes and I'm just looking to have it chipped for more power. I'm not fussed for fuel economy but id like the standard power to go from 221bhp to about 250-260 if that's possible with a simple chip , exhaust and filters without other mods?
its on a 95000 mile car that's just had a service at the main dealer and has full service history so id assume it to be in decent condition.

I think you'd be ok with a generic remap/flash to be inset. My X5 will go from 218 to 260 with a map according to a specialist near where I live.
