Default Best Way To Drop Rear Springs?

Going to be lowering my Focus over Christmas.

Front is easy. Break ball joint, remove strut and swap the spring.

Rear I'm not so sure. I've never changed springs on an independent rear setup before.
In my mind I think if I popped a jack under the rear arm, removed one of the bolts (any preference to side?) and dropped the jack they would come out nicely. Then reverse to pop new ones back in.

Right or wrong? Is there an easier way?

Bailes.

On my mk2 focus they were easy, unbolt the anti roll bar link and the lower shock bolt then swing the arm down. Don't touch the inner arm to subframe bolt or you will mess the alignment up. Then as you say, Jack back up into place.

On my ST170 i just took the rear shocker nuts, removed the rear link rods then levered the suspension down and slid the spring in.

I dont know if the mk3 will be the same.

That depends. Lowering it may mess it up. That is if the bolts have not seized into the bush sleeve either!

Whatever bolts you remove be sure to grease them on the parts that will be inside bushes.

This point here is imperative IMHO unless you want hassle later on.
