for a cosworth or well maintained CVH I could go for Redline 10w60. It is fully synthetic ester based oil and this type is the best. (you can choose another brand but make sure it is not just synthetic but synthetic poly ol ester based.
For some of the more modern Z-tec and later engines you can go for a 5w40 weight, depending on it's use you might mix the two weights of oil for a compromise.
The 5w40 flows a bit better on start-up, to lubricate the engine more quickly, but can make it past piston rings in some circumstances. It is also thinner than the 10w60 at operating temp.

Depends on quality. A bad quality 10W-60 oil could be thinner than a good ...W-50 oil. Mobil 1 oils are good (other oils are also good). Would go for a 5W-50 or 10W-60. 5W-50 is a strong allround oil for every day use, nice cold and hot protection. The datasheets will give you the information, how "thick" or "thin" an oil is at which temp. etc. the grade numbers say nothing.
I'm using 5W-50 in my BOA and YB Cosworth, they are/was my daily drivers. The engine will thank you, if the cold oil lubrication sets in 2 - 3 sec. earlier.
On deep winter temps a 10 or 15W-50 will need 5 - 15 sec. more to lubricate the engine from cold start.

Opie oil man put a thread on here the other day saying 10/60 is not really suitable.
When I first bought my cossie I used castrol rs 10/60. The oil seemed to not last as long.Every week I was topping the level up.
