Default Wheel ET affecting handling, why offset faces?

I'm looking for advice and experience regarding wheel offset and the theory behind it, for instance FWD tend to run a certain offset, RWD another so... say for example I change from ET 35 to ET 50 on the front of a RWD chassis how would that affect the steering and what's the theory behind having offset mounting faces to wheel centres is it just for filling out the arches correctly or is it to do with manoeuvring or? Likewise if I reduce the offset to say ET 15 theoretically would I have slightly slower steering?*
Ideas and knowledge welcome thanks

Do a google search on kpi angles it's not 100% relevant but gives some info how offset is applicable.
