Default Thinking of a little summer resto on my mk3

Been thinking recently of doing a little resto over the summer break from college once its finaly back to my house. It was fully stripped about 4 years ago when my uncle owned it and after it was stripped it was put under the cover on his drive and forgot about. About 7 months ago i brought the car off him (My first car) and started to re-assemble it back together, and its due to go off to MOT within next week and hopefull it can come back home into the garage nice and tidy. Over summer im planning on doing some work under the car and just doing little bits and bobs..

Im just wondering if anyone has any advise on what i should be checking and looking at mainly.. Would it be worth re painting under the car/enine bay? Its in good condition (no rust to what i can see) but just thinking would it be worth while doing for the long run?

Also, would it simply be a straight swap for an xr3 (Non injection) engine as its a 1.3 at the moment and its just an idea at the moment..

Thanks for any advise you can give its much appreciated.
