Cossie wheeloff sets????

Cossie wheeloff sets????
I'm in the middle of building my S2 ERST to run RWD cossie running gear and motor. I need to know a few things about Off Sets. I want to run a standard Ford Cosworth wheel, either 3dr, 2wd or 4wd. I've never really got my head around the wheel off set thing as i've always just bought wheels and gone on companies advice.
I need to know what the off sets for the wheel types are, which will stick out the furthest and what off set will give the best drive.
The car will be used as my weekend family wagon and show courier, i'm not looking for it to be trackday weapon, i just want a nice cossie in a nice sheel
I did have a site saved that explained offsets but i'm unable to find it
Help would be great,

Ive gone through this many times to get my 3 door to drive nice on 17's. ive had 8 sets of wheels in 6 years
Standard 3 door wheel is ET37
Standard saff wheel is ET37 to ET40 for the 4x4
Standard escort cosworth wheel is ET25 (will stick out more than the others and wont drive as nice)
So i ended up going
ET30 8j on the rear and ET30 7j on the front, Reason for the slimmer 7j wheel on the front is i wanted it to look like the standard ET37 So no arch catching as ive been in so many cars that catch arches unless you have rock hard suspension which i didnt want on a road car .
