Mk6 Escort 2.0 zetec hunting at idle- any ideas?

Mk6 Escort 2.0 zetec hunting at idle- any ideas?
Help dudes!
This one will be hard to diagnose due to what has been done, but anybody who has done the same conversion may have had the same issue!?
Dropped a silvertop 2.0 into my 1600 Escie finesse estate with the following fitted to it:
2.0 AFM
2.0 rail injectors and press reg
2.0 Throttle body
1.8 non EGR inlet
Ashley 4 branch and magnex system
early non PATS 2.0 Mondeo ECU.
New 1.6 Escort lambda sensor
New 1.6 idle valve
It starts and runs perfectly from cold, and pulls right round to the limiter, no complaints at all with performance, but when it's warm, it hunts quickly around 900 -950 rpm, ocassionally cutting out when it's warm. Above that it revs smoothly as you like. It's a little thirsty
My only concern is that as mine is a late car, it only has one wiring plug for water temp sensor/temp gauge, and with the older style thermostat housing fitted to the engine, it has a temp gauge sensor surplus to requirements! The standard 2.0 water temp sensor to talk to the ECU is fitted.Could this be an issue?
Any ideas on what to look for?

breather valve in the front of the block, when its hunting get some long nose pliars and squeeze the pipe off of the valve so as its blocked, if it stops hunting theres ya problem
