Default Cylinder head size?

I know this was talked about before but i cant find the post. Im looking to get my head on my 3 door cosworth faced and was wanting to know what the standard size is and also the min size that it can go down to?

Minimum head height between mating faces according to the Workshop Manual is 138.68mm (maximum material removal: 0.13mm)

Upper mating face:
Maximum permissible longtitudinal bow (measured along centre line) - 0.10mm

Lower mating face:
Maximum permissible longtitudinal bow (100mm straight edge): 0.02mm
Maximum permissible lateral bow (100mm straight edge): 0.02mm
Maximum permissible overall longtitudinal bow: 0.08mm
