Default Lining and insulating workshop

In the process of converting my old stone built barn into a workshop, I've replaced the tin roof with new box profile fixed the rotten sections of sarking and put new felt on. I am wanting to insulate the line the inside of it, it is stone built it but is dry and damp free there is new concrete floor to go in yet aswel.
I have been thinking of OSB (stirlingboard) then painting it white but not sure on insulation.

I've seen stuf like this but it was black plastic sheeting that some used for sides on a farm trailer, think I'm going to use Stirling board and going to price kingspan for the insulation probably just the 50mm stuff as the old 3ft thick stone walls seem to keep the place half warm in the winter.
