Default wth are these?

What is the potentiometer here and the extra relays for? This car has AC. and what is this extra idle/throttle bit for? AC idle assist?

Is this indicative of a Salmom system?

Some sort of cruise control possibly?

I know there were some aftermarket systems out there.

Never seen one fitted on a cossie before though.

There is no cruise on the car. The throttle actuator only moves a bit. Enough to compensate for a compressor I guess.

Cat, split/dual exhaust ending in one exit. No air pumps, nothing extraneous like that.

Pass in that case, though if it had any ford part numbers on it, you could always see what the dealer calls it ?

Aftermarket A/C kit maybe? I know factory fitted A/C doesn't have any of that.
