Default gauge question

My oil temperature and water temperature gauges are baffling me. When the car is stood still they show the correct reading, but when the car is in motion they both drop to minimum The oil pressure gauge works perfectly but only the other 2 play up. Its only happened since its last service also if that helps. Any suggestions??

Maybe the engine temperature is dropping, caused by a defective thermostat?
Does it take long for the car to warm up in the morning?
Does the radiator and the top hose start to warm up slowly immediately after starting the cold engine? When yes, thermostat stays open and needs to be replaced.
