I recently upgraded my series 2 escort rs turbos clutch to a helix organic one. Do i need to upgrade the clutch ratchet, what would be the best one to use?

Only if it doesnt disengage properly, not heard of it happening on a Helix only AP Racing.

After getting a bar in to adjust the ratchet manually the pedal worked okay for the first few pumps. Then it just went crunch and carrys on making the noise and is not moving the clutch arm.

Fit the mk5 pedal and replace the cable. I had no end of bother with mine until I made this modification and now its sweet as a nut. There is a guide on the AP Racing webste and has been covered here many times too.

as above. use the later escort pedal . which is adjustable , i used 4paddle cluch and about 5 pumps is fialed.. the ratchet made the clipping noises and the pedal kept dropping down leaving me with no clutch .after fitting the mark 5 pedal ,adjuted it right and it never happened again mate.best thing and the pedal feels really responsive
