ZVH RUNNING VERY HOT!!!

JUST FITTED MY FULLY REBUILT ZVH LUMP ACCRALITE PISTONS,STAGE 3 HEAD,STAGE 2 TURBO,PIPER CAM,FULLY LIGHTENED AND BALANCED BOTTOM END,PRO ALLOY FRONT MOUNT COOLER WITH TWIN FANS
THE PROBLEM WHEN SAT IN TRAFFIC OR TICKING OVER THE TEMP GAUGE GOES STRAIGHT TO THE RED
FITTED A 2WD COSWORTH FAN SWITCH AND A 82DEG STAT AND BLED THE SYSTEM GOT HOT AIR INSIDE THE CAR.AS SOON AS DRIVEING THE GAUGE DROP TO BELOW 1/4.
IVE BRIDGED THE FAN SWITCH ACROSS 4 NOW SO THEY RUN ALL THE TIME ANY IDEARS IM SCARED IN CASE IT OVER HEATS

First I would get a proper water temp guage as the Ford one is crap.
If still really too hot I would be inclined to look to the rad. Have you tried raising the back edge of the bonnet? This can help drop under bonnet temps.
