Whats the point. Why not just chip it, then get it live mapped on the road or air strip etc???
Surely, with the engine out of the car you cant create the exact conditions of when the engine is in the car on the road.

on a dyno it is easier to monitor whats going on inside the engine I should think as you aint got to dodge low flying birds etc etc

Personally I think the only reason to dyno engines (other than the afforementioned pub figures & people wanting to know they've got what they've paid for) is maybe for a new spec of engine that's not been done before?

from seeing harveys both in action dyno,ing a 500 bhp cossie lump i dont think you,d beleive how long and hard it is sometimes to get power i herd them say 3 days to get it rite on 1 occasion, imagine how long that would take to live map fookin long

There's no rain in a dyno room either - may not need to do live map in top gear, but I guess live mapping is difficult if the wheels are spinning.... 500bhp RWD saph, and traction in 1st, second, and third gears don't go togethor .....
With an engine dyno you can tune at a set load and RPM for long lengths of time which will help get your A/F ratio in check without worrying about whether your A/F monitor is sampling fast enough. It also takes out uncontrolable veriables like hills and such.
You can replicate load points run after run to check and test fuelling / ignition at each rpm point. You STILL need to check the engine once in the car as well, but this will be minor tweaking by comparison.
In my own mind, I would NEVER dare max out a car in fifth that had only been mapped in fourth. I would want piece of mind to know that it had been checked in it's worse case scenario, as shit happens at 7500rpm in fifth
