why?

if you're fitting a metal gasket you require a perfectly flat block and that means you need the engine in bits to machine it.

when it's in bits machine the pistons with pockets if you're concerned about valve/piston contact, face a little of the top of the piston if you're worried about piston / head contact or compression ratio.

I have a 200 block, machined to take wire rings at the top, group A spec head, group A head gasket, pocketed low comp pistons, run 2 bar boost at 450 bhp and have done nearly 60k miles with no issues. Old school way but it still works.

i hear from owners the group a gasket is fine.. the cometic gasket dont last many miles ...also i hear from mechanics generaly when a gasket is thick like 2mm and above is risk on big power ..they failed easy ..
