Default Water pressure

One of my water pipes burst so I have replaced the burst one I have gone to start it and another pipe has burst but it's hissing very loudly as if there's alot of water pressure all other signs of head gasket are not there so I'm maybe thinking stuck thermostat or bad air lock can I run it without thermostat for a while as im looking for a new engine or any other ideas cheers

Much bubbling coming back through the header tank while running with the cap off?

Stuck thermostat would cause over heating before bursting hoses imo

There is water coming back header and seems like running around everywhere so I'm maybe thinking whip thermostat out and run with out one? Just let car warm up properly

Also where the plug connects to the thermostat there I two black wires going straight into the plug but there is a random brown wire with a female electrical connection just hanging there and I'm guessing that's y my temp gauge don't work I looked for a hour where it goes I can't see anywhere

There should be a sensor on the front of the cylinder head for the coolant temp

On mine that wire goes to a sensor on the front of the cylinder. Upload a picture of it and I'll see if its the same as mine fella.

There should be a sensor on the front of your head, inbetween the exhaust manifold and the thermostat for your temp gauge, and the one on the side of the thermo with the 2 wires is for your fan switch, does your fans work?
