If you're into history/ww2 etc then Dunkirk has lots to offer, haven't spent much time in france, belgium apart from passing through.
I used to stay in Essen(germany) every sunday night, and Amsterdam every monday night.
I absolutely love Amsterdam, people so friendly and most speak better english than the english!!
The ann frank museum is very interesting, as is the rijksmuseum(national museum), Van Gogh museum if into art, loads of military museums.
If wanting english type pubs, the dutch ones differ somewhat, there are bruincafe, means brown cafe this is the closest to a uk pub, called brown cafe due to decor being so tobacco stained over the years, then there is eetcafes, which as you've guessed you can get food at, can get snacks etc at bruins, but eets(pronounced "ates") do more like family type meal stuff.
Do a canal trip, some really interesting bridges there(well over 1000!!), smoke some illegal(in uk) substances if that's your thing.
Despite what most think they are NOT legal in amsterdam, they have "toleration zones" so keep it inside the cafe etc where you can readily buy/smoke it, go outside and the plod are EXCEPTIONALLY harsh about law and order, browse all the red light areas, it's a very clean affair there as the ladies have to be checked each week, pay tax etc and just make sure they don't mistake you for chinese or american, the price trebles!!
Though a lot are english, where they can £2K on a busy weekend, public transport is ace also, bike theft is a serious problem, most don't report it, they just steal another, often getting their own one back years later.
Watch the speed limits esp in holland, they do dirty tricks like using a car they've just pulled for speeding getting the owner to put the hazards on and the bonnet up while they stand the other side with the gun etc, they also have vagrancy laws, so always sufficient cash on you to get out the country should you need to/told to, get arrested otherwise, so be good.
