I run a red top 40 Rich.
Increased it last year as the 30 was struggling a little with the compression when hot.

Got my old one knocking round if you need to try it. It wont fit in that box you have, but can get specific ones made for the red tops
**Edit** Just to say with these you dont necessarily need a battery box and can lay them down on their side etc

Okay, second question as Markk suggested the other day.
Is the terminal okay to handle all the current draw, as it's not particularly big?
What about charging and recharging? If they go flat, are they fooked?

M6 male terminal is more than plenty
If your in anyway worried you can put a small nut on first, then a bigger washer, then your cable, then a washer then the top nut
But you won't need to.
If they go flat they can be trickle charged with low amps with no loss of performance. What they dont like when flat is a heavy or boost charge, and thats where people make mistakes with them.
When not in use I have one of those milliamp solar panel chargers connected and it keeps it in tip top condition.

Whats the current cranking amps of your wet cell battery Rich ? Go for a similar match to that if it used to be okay. Leccy windows make no difference as you generally are not operating them when cranking the engine.
Yep because they are sealed and contain no liquids there is no need to box them and no gasses are produced so they are 100% safe.
Mine lives behind my seat for central low down weight distribution, and to have that comfort and piece of mind I would pay any price.

You connect both negatives together and both positives together (parrallel) then just connect your pos battery cable to one of the positive terminals and the neg battery cable to one of the negative terminals. This will DOUBLE the amps capacity that the batteries can supply (as long as you use 2 the same size)...
N.B. If you wire them in series it will double the volts so don't do ithat way!
Or just get the Red Top 60!
The 40 should be good enough although I am not willing to throw my hat in the ring and say it will be! 
Once running your alternator should take over the current draw of the electrical systems. I would advise you get the alternator tested to make sure it has the 90 amp reg in it and not the 60 amp that I find a few Cossies have been poked with. 60a is not strong enough with everything switched on, though I will assume you won't have things like front fog lamps or heated screens on your car? If not then electrical demand won't be as great although this could be counter balanced by additional fuel pumps etc....
