undersealing???
If you dont mind gettin dirty scrub under the car with a stiff brush,then you can buy underseal with added waxoil in a black tin with yellow wrighting on it wich can be brushed on with a paint brush,dont aply it directly to anything that gets hot like the exhaust.youl be able to protect this winter for less than a tenner.
I always use underseal and it's always dried okay for me - although it will take a few days. Seems good stuff. I try to touch up the underside at least once a year. I also removed the wheel arch liners and undersealed it all with the yellow waxoyl and then replaced the liners and sealed them with the black underseal to stop any water and muck getting behind them.

Being a sprayer with 25yrs experience id suggest stone chip (again) as underseal is crap and stays tacky .......
The weather has jack all to do with moisture , as long as the job your doing is dry and inside a workshop , etch the bare metal , then apply the stone chip , allow to dry , then spray over which ever colour your needs are .....
