Default Gauge importance, volts, oil temp or water temp

What do people consider the most important out of the title list to monitor on a track car ?
I already have Oil press, AFR, boost and inlet plenum temp, but am considering one last item. Had initially though Oil temp but not sure.
What do you guys and gals suggest.

cheer

OIL TEMP + OIL PRESSURE.
You can do without the others how long do you think you will spend looking at them ?
As for volts and the others listed, don't waste your time
