are they the same or do they differ on the two?

Series 2 turbo's are water cooled, S1 turbo isnt.

if a turbo from a s1 was to be fitted to s2 can it be plumbed up to the s2's water cooling system (does the s1 turbo have the connections on it to do so)?

No it doesnt, but you could block the hoses on the S2 system and it would work fine that way.
