Sorry can't help withthe last question, personelly i have been advised not to fit 18's to a saff apparently it makes the ride shat

Standard offset is 40mm.

If you want to those wheels, it depends on rim width and tyre width. I would use a spacer of 5mm to get the standard offset and to clear the spring platform if you don,t use coilovers. You should use 215/35 tyres to get good clearance, and you will probably have to roll out your wheelarches too and cut away the upper mounting point for the inner plastic wheelarch.

Yep ET40 for definate - its stamped on my 4x4 saff rims.

When refereing to "they are 7.5 inch by offset" what alloys are we refering to here, as the sentence before you confirmed that the saph 4x4 rims are 7" wide - are you saying there were two widths of saph 4x4 rims avialable from ford?
