for car electrics what's + and what's - ?

I mean are brown wires + (supply)
and black/red coloured ones - (earth)???

before anyone starts asking; yes i'm blond and dumb

You on the right lines.

Brown are earth
black & red are power

But you really need to check the haynes manual and use a multi meter to check.

brown is used a lot as earth (-)...
