Default Changing gear without the clutch - will it...

Harm the car?

Driving her Passat, it's quite easy to change with out even feeling it, especially 3rd to 4th and back.

I do it all the time, any chance of long term damage? Obviously yes if it's crunching and all sorts, but how about when you hardly feel the change?

no problem, i do it all the time in my s2. You are essentially not using the synchro, so have to match the road speed to the revs exactly, which becomes easy with practice. If u get it wrong - crunch lol.

I always thought it was good practice to match the revs on the down change so you don't lock up under heavy braking??? (when on track as theres no chance of doing it in my caterpillar boots on the road without mashing both pedals to the floor!)
