Default 205 tyres on 8" wide rims?

Who runs this, and is there a rule of thumb that says it's perfectly ok?
I saw a car with this setup not long ago and they looked perfectly ok to me, but someone said they were stretched and this wasn't a good idea?
I'm totally ok with it but obviously I'd rather get some good advice before I buy a new set.

FYI-I have a rubbing issue with my wheels, (arches are rolled) and running 8X17 ET38mm RL7's with 215/40/17 tyres, I suspect since I have a brake kit that the offset(bells) are effecting this somehow as it' didnt rub with 18's and 215/35/18 tyres with 35mm offset wheels on standard brakes.

Going for a set of parada's, how good are these, i have shit tyres at the moment so anything is an improvement anyway, but opinions welcome.
