Default reshell into a lesser spec shell

hi,i have a early 2wd sierra sapphire cosworth.i started a restortion on the car but the further i dig the more grot and bad repairs i find.
i have bought a newer sierra with very low miles which has a mint shell.
my plan is to completely strip the 32k car to a complete bare shell then respray the same colour as my car then rebuild as i was going to with the cosworth.
every nut and bolt will be from my cosworth and the only part from the 32k mile car will be the shell.
the 32k mile car is a sierra chasseur and not a cosworth,so thats what the v5 will say,when i go to insure this even after i change all relevant numbers on the v5 (engine,cc) will this still be viewed as a modified car with crippling insurance premiums?
it will be modified in other depts,suspension,brakes,engine and wheels but the bodywork,interior,suspension layout etc will be 100% cosworth from my rusty car!
