The place that sprayed my Sapphire Cosworth did no wet flatting at all, everything apart from the final flat and polish was done dry as they claimed wet flatting could cause micro blisters in the oven due to the porosity of the primer.

Dry flat is the modern way for sure
I've been wet flatting classics for decades though and never had one of my own jobs let me down
